Hariyali Chicken Kebab is a famous non veg appetizer served over most restaurants in India. Hariyali chicken kebab is termed 'hariyali' because of the green marination of cilantro, mint and green chillies mainly in it. The chicken pieces coated in curd, green paste, marinated and finally grilled into perfection. Try making this recipe at home following few simple steps as below.
Ingredients:
For the marination:
Chicken pieces (500 g)
Hung curd (100 g)
Ginger paste (1 tbsp)
Garlic paste (1tbsp)
Mustard oil (2 tbsp)
Chaat masala (1tbsp)
Lemon juice (2 tbsp)
Salt per taste
For Green hariyali paste:
Cilantro / coriander leaves (1/2 cup)
Mint leaves (1/2 cup)
Green chillies (1/2 pieces)
Direction:
Step 1:
In a bowl, take the chicken pieces, to it add hung curd (hung the curd in a muslin cloth until the extra water seeps away), ginger garlic paste, chaat masala, lemon juice, green paste (coriander, mint, green chillies), mustard oil, salt and mix everything well. Marinate it overnight for best results or for at least 2-4 hours.
Step 2:
Oil the skewers, place skewers properly.
Step 3:
Without oven / In pan-
Brush the pan with oil, place the skewers and let it cook on both sides for 10-15 mins until cooked well.
In oven-
Preheat the oven at 180° for 5 mins,
Bake it at 200° for 15-20 mins until cooked well.
In Air Fryer
Bake directly at 200° for 15 mins.
Step 4:
To bring out the best of it serve it with the topping of fresh nutritious microgreens. To enhance its nutritional value, add green chutney and salad.
